
Ingredients
- 4 eggs
- 2 tablespoons olive oil
- ½ tablespoon flour
- ¼ cup of milk
- ¼ red pepper, finely chopped
- 1 tomato, finely chopped
- 1/3 onion, finely chopped
- ½ courgette, grated
- 100 gr feta cheese, grated
- Salt and pepper
Preparation
- Heat the olive oil in a greaseproof pan and sauté the onion, pepper, courgette and tomato.
- Add salt and pepper, and simmer until soft.
- Beat the eggs, flour and milk; pour the mixture in the pan and stir.
- Once the bottom side of the mixture begins to cook add feta, turn down the heat and close the lid.
- Ten minutes later, try to flip the omelette or if you can't, fold it and leave it for few more minutes to cook.
- Put on a plate and serve with cherry tomatoes or fresh lettuce leaves.
