Cheese and vegetable omelette

Eggs have a very high nutritional value. They contain protein of high biological value, iron and other micro-nutrients. Many children do not prefer eggs in their boiled version. Omelettes as an option can also allow the consumption of vegetables. So include this option in your menus, to enhance your child's nutrition.

Ingredients

  • 4 eggs
  • 2 tablespoons olive oil
  • ½ tablespoon flour
  • ¼ cup of milk
  • ¼ red pepper, finely chopped
  • 1 tomato, finely chopped
  • 1/3 onion, finely chopped
  • ½ courgette, grated
  • 100 gr feta cheese, grated
  • Salt and pepper

 

Preparation

  • Heat the olive oil in a greaseproof pan and sauté the onion, pepper, courgette and tomato.
  • Add salt and pepper, and simmer until soft.
  • Beat the eggs, flour and milk; pour the mixture in the pan and stir.
  • Once the bottom side of the mixture begins to cook add feta, turn down the heat and close the lid.
  • Ten minutes later, try to flip the omelette or if you can't, fold it and leave it for few more minutes to cook.
  • Put on a plate and serve with cherry tomatoes or fresh lettuce leaves.
